Ingredients

  • 1 medium onion (chopped)
  • 2 unripe plantains (peeled, diced)
  • 1 cup spinach or bitter leaves
  • 3 cups low-sodium vegetable broth
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp palm oil
  • 1 cup lean protein (diced turkey, fish, or tofu)
  • 1 tsp ginger (grated)
  • 1 tsp cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Prep Plantains: Peel and dice unripe plantains into small cubes (smaller pieces cook faster and reduce starch content).
  2. Heat palm oil in a pot, sauté onions, garlic, ginger, and bell pepper for 2 mins.
  3. Stir in turkey/fish/tofu and cook until lightly browned.
  4. Add diced plantains and broth. Simmer for 15 mins until plantains soften.
  5. Stir in spinach/bitter leaves and cayenne. Cook for 3 more mins.
  6. Adjust with salt (minimal) and serve hot.
