- 1 medium onion (chopped)
- 2 unripe plantains (peeled, diced)
- 1 cup spinach or bitter leaves
- 3 cups low-sodium vegetable broth
- 1 red bell pepper (diced)
- 2 cloves garlic (minced)
- 1 tbsp palm oil
- 1 cup lean protein (diced turkey, fish, or tofu)
- 1 tsp ginger (grated)
- 1 tsp cayenne pepper (optional)
- Salt to taste
Instructions
- Prep Plantains: Peel and dice unripe plantains into small cubes (smaller pieces cook faster and reduce starch content).
- Heat palm oil in a pot, sauté onions, garlic, ginger, and bell pepper for 2 mins.
- Stir in turkey/fish/tofu and cook until lightly browned.
- Add diced plantains and broth. Simmer for 15 mins until plantains soften.
- Stir in spinach/bitter leaves and cayenne. Cook for 3 more mins.
- Adjust with salt (minimal) and serve hot.
