- ½ cup almond flour
- 1 tsp cinnamon (regulates blood sugar)
- ¼ tsp salt
- Wet Ingredients:
- 1 tsp vanilla extract
- 1 large ripe banana, mashed (about ½ cup)
- 1 tbsp peanut butter (or almond butter, unsweetened)
- Optional Add-ins:
- 2 tbsp chopped walnuts (healthy fats)
- 1 tbsp chia seeds (extra fiber)
- 1 tbsp sugar-free dark chocolate chips
Instructions
- Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- Mix dry ingredients (oats, almond flour, cinnamon, baking powder, salt).
- Combine wet ingredients (mashed banana, peanut butter, vanilla).
- Fold together until a thick dough forms. Add optional mix-ins.
- Scoop 1-tbsp portions onto the baking sheet. Flatten slightly.
- Bake 12–15 mins until edges are golden. Cool completely.
