Ingredients

  • Dry Ingredients:
  • ½ tsp baking powder
  • 1 cup rolled oats (gluten-free if needed)
  • ½ cup almond flour
  • 1 tsp cinnamon (regulates blood sugar)
  • ¼ tsp salt
  • Wet Ingredients:
  • 1 tsp vanilla extract
  • 1 large ripe banana, mashed (about ½ cup)
  • 1 tbsp peanut butter (or almond butter, unsweetened)
  • Optional Add-ins:
  • 2 tbsp chopped walnuts (healthy fats)
  • 1 tbsp chia seeds (extra fiber)
  • 1 tbsp sugar-free dark chocolate chips

Instructions

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
  2. Mix dry ingredients (oats, almond flour, cinnamon, baking powder, salt).
  3. Combine wet ingredients (mashed banana, peanut butter, vanilla).
  4. Fold together until a thick dough forms. Add optional mix-ins.
  5. Scoop 1-tbsp portions onto the baking sheet. Flatten slightly.
  6. Bake 12–15 mins until edges are golden. Cool completely.
