  • 1½ cups almond flour (or ¾ cup almond + ¾ cup oat flour)
  • Wet Ingredients:
  • 2 tbsp olive oil (or melted coconut oil)
  • 2 medium ripe bananas, mashed (about ¾ cup)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar (helps rise)
  • Optional Add-ins:
  • ¼ cup chopped walnuts (healthy fats)
  • 2 tbsp sugar-free dark chocolate chips
  • Tea Pairing:
  • Cinnamon tea (regulates glucose)
  • Green tea (boosts metabolism)

Instructions

  1. Preheat oven to 175°C (350°F). Grease a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients (mashed bananas, eggs, oil, vanilla, vinegar).
  4. Combine wet and dry mixtures. Fold in walnuts/chocolate chips if using.
  5. Bake 35–40 mins until a toothpick comes out clean.
  6. Cool 15 mins before slicing.
