Ingredients

  • Base Layer:
  • 1½ cups sugar-free almond cake (or low-carb pound cake), cubed
  • 1 tbsp sugar-free vanilla syrup (optional for moisture)
  • Cream Layer:
  • 1 cup sugar-free vanilla Greek yogurt
  • ½ cup sugar-free whipped cream
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (helps regulate blood sugar)
  • Fruit Layer:
  • 2 cups fresh strawberries, sliced
  • 1 tbsp chia seeds (thickens juices naturally)
  • ½ tsp lemon zest
  • Topping:
  • ¼ cup toasted slivered almonds
  • 6 fresh mint leaves

Instructions

  1. Toss berries with chia seeds and lemon zest. Refrigerate 15 mins to thicken.
  2. Fold whipped cream into yogurt with vanilla and cinnamon.
  3. Layer in glasses:
  4. Bottom: Cake cubes + vanilla syrup (if using)
  5. Middle: ½ cream mixture
  6. Next: ½ strawberries with juices
  7. Repeat layers
  8. Chill 2+ hours for flavors to blend.
  9. Garnish with almonds and mint before serving.
