Ingredients

  • Base:
  • 1 medium green cabbage, shredded (about 6 cups)
  • 1 tbsp olive oil
  • 1 tsp salt
  • Protein Layer:
  • 1 cup cooked lentils (or lean ground turkey/chicken)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • Sauce:
  • 1 can (14oz) diced tomatoes (no sugar added)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • ½ tsp oregano
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • Topping:
  • ½ cup shredded part-skim mozzarella
  • 2 tbsp grated Parmesan
  • 1 tbsp olive oil

Instructions

  1. Prep cabbage: Toss shredded cabbage with 1 tbsp oil and salt. Bake at 375°F (190°C) for 15 mins to soften.
  2. Cook filling: Sauté onion, garlic, peppers, and mushrooms until soft. Add lentils and spices.
  3. Make sauce: Combine tomatoes, paste, and seasonings. Simmer 5 mins.
  4. Layer: In a baking dish: cabbage → lentil mix → sauce → repeat.
  5. Top: Sprinkle cheeses and remaining oil.
  6. Bake: 25-30 mins at 375°F until bubbly and golden.
