- 1 bell pepper, diced
- 1 cup mushrooms, sliced

- 1 can (14oz) diced tomatoes (no sugar added)
- 2 tbsp tomato paste
- 1 tsp paprika
- ½ tsp oregano
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- Topping:
- ½ cup shredded part-skim mozzarella
- 2 tbsp grated Parmesan
- 1 tbsp olive oil
Instructions
- Prep cabbage: Toss shredded cabbage with 1 tbsp oil and salt. Bake at 375°F (190°C) for 15 mins to soften.
- Cook filling: Sauté onion, garlic, peppers, and mushrooms until soft. Add lentils and spices.
- Make sauce: Combine tomatoes, paste, and seasonings. Simmer 5 mins.
- Layer: In a baking dish: cabbage → lentil mix → sauce → repeat.
