Ingredients
- Base:
- 200g whole wheat spaghetti
- 1 tbsp olive oil
- Sauce:
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1 tsp ginger, grated
- 1 scotch bonnet pepper (adjust to taste)
- 3 tomatoes, blended
- 1 tbsp tomato paste
- 1 low-sodium stock cube
- ½ tsp turmeric
- 1 tsp thyme
- 1 bay leaf
- 1 cup chopped spinach
- 200g lean protein (chicken, shrimp, or tofu)
- Garnish:
- Fresh basil or parsley
Instructions
- Boil spaghetti in salted water for 8-9 mins (al dente)
- Drain, toss with 1 tbsp olive oil to prevent sticking
- Heat oil, sauté onions and garlic for 2 mins
- Add ginger, paprika, turmeric, thyme, bay leaf
- Stir in blended tomatoes, tomato paste, and stock cube
- Simmer for 10 mins until thickened
- Add protein and cook through (5-7 mins)
- Stir in spinach last
- Toss cooked spaghetti with sauce
- Garnish with fresh herbs
