Ingredients

  • Base:
  • 200g whole wheat spaghetti
  • 1 tbsp olive oil
  • Sauce:
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp ginger, grated
  • 1 scotch bonnet pepper (adjust to taste)
  • 3 tomatoes, blended
  • 1 tbsp tomato paste
  • 1 low-sodium stock cube
  • ½ tsp turmeric
  • 1 tsp thyme
  • 1 bay leaf
  • 1 cup chopped spinach
  • 200g lean protein (chicken, shrimp, or tofu)
  • Garnish:
  • Fresh basil or parsley

Instructions

  1. Boil spaghetti in salted water for 8-9 mins (al dente)
  2. Drain, toss with 1 tbsp olive oil to prevent sticking
  3. Heat oil, sauté onions and garlic for 2 mins
  4. Add ginger, paprika, turmeric, thyme, bay leaf
  5. Stir in blended tomatoes, tomato paste, and stock cube
  6. Simmer for 10 mins until thickened
  7. Add protein and cook through (5-7 mins)
  8. Stir in spinach last
  9. Toss cooked spaghetti with sauce
  10. Garnish with fresh herbs
