Ingredients
- ½ cup egusi (melon seeds)
- 1 tbsp olive oil
- 1 cup spinach
- 1 unripe plantain (boiled, mashed)
- 1 smoked fish
Instructions
- Sauté egusi in oil for 2 mins. Add fish and 1 cup water, simmer for 10 mins.
- Add in your desired spices including pepper
- Stir in spinach.
- For swallow: Boil, peel, and mash unripe plantain.
- Serve together.
