Ingredients

  • ½ cup egusi (melon seeds)
  • 1 tbsp olive oil
  • 1 cup spinach
  • 1 unripe plantain (boiled, mashed)
  • 1 smoked fish

Instructions

  1. Sauté egusi in oil for 2 mins. Add fish and 1 cup water, simmer for 10 mins.
  2. Add in your desired spices including pepper
  3. Stir in spinach.
  4. For swallow: Boil, peel, and mash unripe plantain.
  5. Serve together.
