Ingredients
- 2 cups seedless watermelon, cubed (frozen is best)
- ¼ cup plain Greek yogurt (for creaminess) or a scoop of vanilla protein powder
- 8-10 fresh mint leaves
- Juice of ½ lime
- 1 teaspoon honey or agave nectar (optional, if watermelon isn't very sweet)
- Splash of water or coconut water (if needed for blending)
- For Garnish:
- Small watermelon cube
- Fresh mint sprig
- Lime wedge
Instructions
- For a thick, slushy consistency, cut the watermelon into cubes and freeze them for at least 2 hours beforehand.
- Add the frozen watermelon, Greek yogurt, mint leaves, lime juice, and honey (if using) to a blender.
- Blend on high speed until the mixture is smooth and bright pink. If it's too thick to blend, add a small splash of water or coconut water.
- aste the shake. The mint should be a clear, fresh note. Add more mint or lime juice to suit your preference.
- Pour into a glass. Garnish with a watermelon cube, a sprig of mint, and a lime wedge on the rim. Enjoy immediately!
