Instructions
- Spread the shredded coconut in a dry skillet over medium-low heat. Toast for 3-5 minutes, stirring constantly, until fragrant and golden brown. Remove immediately from the pan to cool.
- Place a tall glass in the freezer.
- Wash the lime well, then zest it using a fine grater. Juice half of the lime.
- In a blender, combine the coconut ice cream, coconut milk, most of the toasted coconut (reserve some for garnish), lime zest, lime juice, and cream of coconut (if using).
- Blend on medium speed until the mixture is smooth and creamy.
