Ingredients

  • Egg 1
  • Avocado 1 (220g)
  • Salt and pepper (to taste)
  • Lemon ½ (40g)
  • Whole wheat bread 4 slices (160g)
  • Cucumber 60g
  • Smoked salmon 50g

Instructions

  1. Cook the egg in a boiling pot of water for 7 minutes
  2. In the meantime, cut the avocado in half, peel, remove the pit and use a fork to mash the flesh
  3. Season the mashed avocado with salt, pepper and lemon juice
  4. Spread the avocado cream onto half of the bread slices
  5. Cut the cucumber into thin slices and place on top of the avocado
  6. Peel the boiled egg and cut into slices. Place the egg slices and salmon slices on top of the cucumbers. Cover each with a second slice of bread
