Ingredients
- Egg 1
- Avocado 1 (220g)
- Salt and pepper (to taste)
- Lemon ½ (40g)
- Whole wheat bread 4 slices (160g)
- Cucumber 60g
- Smoked salmon 50g
Instructions
- Cook the egg in a boiling pot of water for 7 minutes
- In the meantime, cut the avocado in half, peel, remove the pit and use a fork to mash the flesh
- Season the mashed avocado with salt, pepper and lemon juice
- Spread the avocado cream onto half of the bread slices
- Cut the cucumber into thin slices and place on top of the avocado
- Peel the boiled egg and cut into slices. Place the egg slices and salmon slices on top of the cucumbers. Cover each with a second slice of bread
