Ingredients

  • Whole wheat bread, sliced 2 slices (50g)
  • Spinach 25g
  • Eggs 2
  • Avocado ½ (110g)
  • Shredded cheddar cheese 40g

Instructions

  1. Toast the bread slices
  2. Warm in the spinach in a non-stick pan until it collapse and the top one of the bread slices with it
  3. Beat the egg with a fork and place in the same pan
  4. Before the egg has completely cooked, use a spatula to fold in half to create a rectangular omelet that fits well on top of the toast
  5. Place the finished omelet on top of the spinach and sprinkle with cheddar
  6. Peel the avocado, cut into slices and place on top of the spinach and egg. Cover with the second slice of bread
