Ingredients

  • Tomato 1 (120g)
  • Coconut oil 1tsp (8ml)
  • Eggs 3 (210g)
  • Salt and pepper (to taste)
  • Feta, low fat 100g
  • Fresh spinach 40g

Instructions

  1. Cut the tomato into small cubes, coarsely chop the spinach and briefly brown with the tomato in a pan with coconut oil
  2. Scramble the eggs and put in the pan, season with salt and pepper and mix well
  3. When the egg starts to thicken, crumble the feta by hand and add to the pan
