Ingredients

  • For the Salad:
  • 6 cups leafy greens (e.g., romaine, spinach, or arugula)
  • 2 ripe but firm pears (e.g., Bartlett or Anjou), cored and thinly sliced
  • ⅓ cup pecans, toasted
  • ⅓ cup dried cranberries
  • ½ red onion, thinly sliced
  • 6 strips bacon, cooked until crispy and crumbled
  • 4 oz sharp cheddar cheese, crumbled or shaved
  • For the Dressing (a classic sweet-tangy option):
  • ¼ cup extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a skillet, cook bacon until crispy. Drain on paper towels, then crumble.
  2. In the same skillet (or a dry pan), toast pecans over medium heat for 3-4 minutes until fragrant. Let cool.
  3. Wash and dry greens. Core and thinly slice pears. Thinly slice red onion.
  4. In a small jar, combine olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Shake well to emulsify.
  5. In a large bowl, combine greens, sliced pears, toasted pecans, dried cranberries, red onion, crumbled bacon, and cheddar cheese.
  6. Drizzle with dressing and toss gently just before serving.
