Ingredients

  • For the Salad:
  • 4 cups mixed greens (e.g., romaine, arugula, or spinach)
  • 1 large apple (e.g., Honeycrisp, Fuji, or Granny Smith), cored and thinly sliced
  • ½ cup walnuts, toasted
  • ¼ cup crumbled blue cheese, feta, or goat cheese
  • 2 tbsp red onion, thinly sliced (optional)
  • 2 tbsp dried cranberries or raisins (optional)
  • For the Vinaigrette:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. In a dry skillet over medium heat, toast walnuts for 3-5 minutes, stirring frequently, until fragrant. Let cool.
  2. Wash and dry greens. Core and slice the apple. Thinly slice red onion if using.
  3. In a small jar, combine olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Shake well to emulsify.
  4. In a large bowl, combine mixed greens, apple slices, toasted walnuts, cheese, and optional red onion and cranberries.
  5. Drizzle with vinaigrette and toss gently. Serve immediately.
