Ingredients

  • For the Beef and Broth:
  • 1 kg (2.2 lbs) stewing beef (chuck or round), cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 cup red wine (optional, but recommended for depth) or extra broth
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • For the Vegetables:
  • 4 medium carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and cut into large chunks
  • 2 celery stalks, chopped (optional)
  • 1 cup frozen peas (added at the end)

Instructions

  1. Season the beef cubes with salt and pepper. In a large pot, brown the beef in batches. Remove the beef and set it aside.
  2. In the same pot, cook the onion and garlic until they're soft. Stir in the flour, then add the beef broth, tomato paste, bay leaves, and thyme.
  3. Return the beef to the pot. Bring to a boil, then reduce the heat, cover, and simmer for 1 hour.
  4. Add the potatoes, carrots, and celery. Simmer for another 30-45 minutes until the beef and vegetables are tender. Stir in the frozen peas for 5 minutes, then remove the bay leaves.
  5. Adjust the seasoning and serve the stew hot.
