- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1 cup red wine (optional, but recommended for depth) or extra broth
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- For the Vegetables:
- 4 medium carrots, peeled and cut into chunks
- 3 medium potatoes, peeled and cut into large chunks
- 2 celery stalks, chopped (optional)
- 1 cup frozen peas (added at the end)
Instructions
- Season the beef cubes with salt and pepper. In a large pot, brown the beef in batches. Remove the beef and set it aside.
- In the same pot, cook the onion and garlic until they're soft. Stir in the flour, then add the beef broth, tomato paste, bay leaves, and thyme.
- Return the beef to the pot. Bring to a boil, then reduce the heat, cover, and simmer for 1 hour.
- Add the potatoes, carrots, and celery. Simmer for another 30-45 minutes until the beef and vegetables are tender. Stir in the frozen peas for 5 minutes, then remove the bay leaves.
