Ingredients

  • For the Meatballs:
  • 500g ground beef or chicken
  • 1 small onion, finely minced
  • 1 egg, lightly beaten
  • 3 tablespoons breadcrumbs or all-purpose flour
  • 1 teaspoon dried thyme
  • 1 stock cube, crushed
  • Salt and black pepper to taste
  • Vegetable oil for frying
  • For the Stew:
  • 2 tablespoons vegetable oil or olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, minced (optional)
  • 3 large tomatoes, blended or 1 can (400g) crushed tomatoes
  • 1 red bell pepper, blended
  • 1-2 Scotch bonnet peppers, blended (adjust to taste)
  • 2 tablespoons tomato paste
  • 3-4 medium potatoes, peeled and cut into chunks
  • 2-3 cups beef or chicken broth/water
  • 2 stock cubes, crushed
  • 1 teaspoon curry powder (optional)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a bowl, mix all the meatball ingredients. Shape into small balls and brown them in a pot. Remove and set aside.
  2. In the same pot, cook the onions, garlic, and ginger. Stir in the tomato paste, blended peppers, and seasonings. Cook until the sauce is thick.
  3. Pour in the broth, add the potato chunks, and bring to a boil. Reduce the heat, cover, and simmer for about 15 minutes, until the potatoes are halfway tender.
  4. Add the browned meatballs to the stew. Simmer for another 10-15 minutes until the potatoes and meatballs are fully cooked. Adjust seasoning and serve hot.
