- 4 cups spinach chopped
- Cooked chicken
- Fresh water shrimp (optional)
- 2 fresh tomatoes
- 1 red bell pepper
- 1 medium onion
- 2 habanero peppers
- 2 cloves of garlic
- ¼ cup palm oil
- 3tbsp powdered dried shrimp
- Salt (to taste)
Instructions
- Preparing Your Stew
- Blend half a red onion, tomatoes, bell pepper, garlic, and hot pepper; chop the remaining half red onion.
- Cooking the Sauce
- Heat oil in a pot and sauté chopped onions until golden.
- Add the blended tomato mix and cook for 30 minutes over medium heat, stirring occasionally.
- Once reduced, season with dry shrimp/crayfish powder and salt.
- Stir in cooked chicken or re-hydrated dried mushrooms, if using.
- Finishing the Stew
- Add fresh shrimp to the sauce, followed by spinach.
- Let spinach sit for 1 minute, then gently stir until it wilts by half.
- Adjust salt to taste if needed.
- Add fried tilapia, stir gently, and serve.
