Ingredients

  • 3 eggs
  • Sweetener (to taste)
  • Whipping cream 80g
  • Almond flour 280g
  • Baking powder 8g
  • Salt (to taste)
  • Blueberries 110g

Instructions

  1. Preheat the oven to 180 0C/360 0F
  2. Beat together the eggs, sweetener, coconut oil and whipping cream
  3. Add the almond flour, baking powder and salt. Use a hand mixer to combine into a creamy batter
  4. Fold in the blueberries and pour the batter into muffin molds
  5. Bake for 20 minutes
