Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1 can (15 oz / 425g) white beans (cannellini or navy), rinsed and drained
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • ¼ cup low-sodium vegetable broth or water
  • 1 tbsp lemon juice
  • ¼ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Optional: 1 tbsp grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
  2. Add kale and vegetable broth. Sauté for 5–7 minutes until kale is wilted and tender.
  3. Stir in white beans and cook for another 3–4 minutes until heated through.
  4. Add lemon juice, salt, and pepper. Toss to combine.
  5. Sprinkle with Parmesan cheese if desired. Serve warm.
