- 1 bunch kale, stems removed and leaves chopped
- 1 can (15 oz / 425g) white beans (cannellini or navy), rinsed and drained
- 3 cloves garlic, minced
- 1 tbsp olive oil
- ¼ cup low-sodium vegetable broth or water
- 1 tbsp lemon juice
- ¼ tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Optional: 1 tbsp grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
- Add kale and vegetable broth. Sauté for 5–7 minutes until kale is wilted and tender.
