Ingredients

  • 1 large cucumber (long English or hot-house variety works best)
  • 4 oz (120g) smoked salmon, thinly sliced
  • ¼ cup light cream cheese or Greek yogurt
  • 1 tbsp fresh dill, chopped (plus extra for garnish)
  • 1 tsp lemon juice
  • Black pepper to taste
  • Optional: 1 tsp capers, finely chopped
  • Optional: zest of ½ lemon

Instructions

  1. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin, wide ribbons. Pat dry with a paper towel to remove excess moisture.
  2. In a small bowl, mix cream cheese (or Greek yogurt), dill, lemon juice, black pepper, and optional capers/lemon zest.
  3. Lay a cucumber ribbon flat. Spread a thin layer of the cream cheese mixture along one end. Place a small piece of smoked salmon on top.
  4. Gently roll the cucumber ribbon into a tight spiral. Secure with a toothpick if needed.
  5. Arrange on a plate, garnish with extra dill and lemon wedges.
