Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 lbs (900g) fresh tomatoes, chopped (or 2 cans diced tomatoes, no salt added)
- 1 cup low-sodium vegetable broth
- ¼ cup fresh basil leaves, chopped
- 1 tsp dried oregano
- ½ tsp black pepper
- Salt to taste (optional)
- Optional: 2 tbsp Greek yogurt or a splash of almond milk for creaminess
- Garnish:
- Fresh basil leaves
- A drizzle of balsamic glaze (optional)
Instructions
- Heat olive oil in a pot over medium heat. Add onion and sauté until soft (5 mins). Add garlic and cook for 1 minute.
- Add tomatoes, broth, basil, oregano, pepper, and salt (if using). Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until tomatoes are very soft.
- Use an immersion blender to puree until smooth (or blend in batches in a regular blender).
- Stir in Greek yogurt or almond milk if using for creaminess. Heat through but do not boil.
- Garnish with fresh basil and a drizzle of balsamic glaze if desired.
