Ingredients

  • For the Skewers:
  • 1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 bell pepper (any color), cut into chunks (optional)
  • ½ red onion, cut into chunks (optional)
  • 8–10 wooden or metal skewers (soak wooden skewers in water for 30 mins)
  • For the Marinade:
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey or sugar-free substitute (optional)
  • 1 garlic clove, minced
  • ½ tsp ginger, grated
  • ¼ tsp black pepper

Instructions

  1. In a bowl, whisk together all marinade ingredients. Add chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  2. Preheat grill or grill pan to medium-high heat.
  3. Thread chicken, pineapple, and optional vegetables alternately onto skewers.
  4. Grill for 5–6 minutes per side, turning occasionally, until chicken is cooked through (internal temperature 165°F/74°C) and pineapple is lightly charred.
  5. Serve immediately with a side of cauliflower rice or a green salad.
