- 8–10 wooden or metal skewers (soak wooden skewers in water for 30 mins)
- For the Marinade:
- 2 tbsp low-sodium soy sauce or tamari
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey or sugar-free substitute (optional)
- 1 garlic clove, minced
- ½ tsp ginger, grated
- ¼ tsp black pepper
Instructions
- In a bowl, whisk together all marinade ingredients. Add chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Preheat grill or grill pan to medium-high heat.
