- For the Stew:
- 1.5 lbs (680g) beef chuck or stew meat, cut into 1-inch cubes
- 2 tbsp all-purpose flour
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced (optional)
- 1 medium yam (about 1 lb / 450g), peeled and cut into chunks
- 4 cups beef broth
- 1 cup diced tomatoes (canned or fresh)
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp thyme (dried or fresh)
- 1 tsp rosemary (dried or fresh, optional)
- 1 cup frozen peas or green beans (optional)
- For Garnish:
- Fresh parsley or cilantro, chopped
Instructions
- In a bowl, toss the beef cubes with flour and seasonings. In a large pot, sear the beef in batches until it's browned. Remove the beef from the pot and set it aside.
- In the same pot, cook the onion, garlic, carrots, and celery until they're soft. Stir in the tomato paste and cook for one more minute.
- Return the beef to the pot. Add the beef broth, diced tomatoes, bay leaves, thyme, and rosemary. Bring to a boil, then cover and simmer on low for 45 minutes.
- Add the yam chunks to the pot and simmer for another 30-40 minutes until the beef and yam are both tender. Add any frozen vegetables during the last 5 minutes. Remove the bay leaves, adjust the seasoning, and serve the stew hot.
