Ingredients

  • For the Stew:
  • 1.5 lbs (680g) beef chuck or stew meat, cut into 1-inch cubes
  • 2 tbsp all-purpose flour
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced (optional)
  • 1 medium yam (about 1 lb / 450g), peeled and cut into chunks
  • 4 cups beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp thyme (dried or fresh)
  • 1 tsp rosemary (dried or fresh, optional)
  • 1 cup frozen peas or green beans (optional)
  • For Garnish:
  • Fresh parsley or cilantro, chopped

Instructions

  1. In a bowl, toss the beef cubes with flour and seasonings. In a large pot, sear the beef in batches until it's browned. Remove the beef from the pot and set it aside.
  2. In the same pot, cook the onion, garlic, carrots, and celery until they're soft. Stir in the tomato paste and cook for one more minute.
  3. Return the beef to the pot. Add the beef broth, diced tomatoes, bay leaves, thyme, and rosemary. Bring to a boil, then cover and simmer on low for 45 minutes.
  4. Add the yam chunks to the pot and simmer for another 30-40 minutes until the beef and yam are both tender. Add any frozen vegetables during the last 5 minutes. Remove the bay leaves, adjust the seasoning, and serve the stew hot.
