- 1 lb (450g) large shrimp, peeled and deveined
- 3-4 medium zucchini, spiralized (about 4-5 cups zoodles)
- Salt and black pepper to taste
- ½ teaspoon paprika (optional, for color)
- For the Garlic Butter Sauce:
- 4 tablespoons unsalted butter
- 4-5 cloves garlic, minced
- ¼ cup chicken broth, white wine, or lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- ¼ teaspoon red pepper flakes (optional, for heat)
- Optional for serving: Grated Parmesan cheese
Instructions
- Spiralize the zucchini into noodles. Put them on a towel, sprinkle with a little salt, and let them sit for 10 minutes. Pat them very dry.
- Season the shrimp with salt, pepper, and paprika. Cook them in a large pan with butter for 1-2 minutes per side until they turn pink. Remove the shrimp and set them aside.
- In the same pan, melt the rest of the butter. Add the garlic and red pepper flakes and cook for 30-60 seconds until they are fragrant. Pour in the chicken broth or lemon juice and let it simmer for a minute.
- Add the dry zucchini noodles to the pan and toss them in the sauce for just 2-3 minutes until they are tender. Add the cooked shrimp, parsley, and lemon juice back to the pan and toss everything together.
- Taste to adjust seasonings and serve immediately.
