Ingredients

  • For the Shrimp & Zoodles:
  • 1 lb (450g) large shrimp, peeled and deveined
  • 3-4 medium zucchini, spiralized (about 4-5 cups zoodles)
  • Salt and black pepper to taste
  • ½ teaspoon paprika (optional, for color)
  • For the Garlic Butter Sauce:
  • 4 tablespoons unsalted butter
  • 4-5 cloves garlic, minced
  • ¼ cup chicken broth, white wine, or lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • Optional for serving: Grated Parmesan cheese

Instructions

  1. Spiralize the zucchini into noodles. Put them on a towel, sprinkle with a little salt, and let them sit for 10 minutes. Pat them very dry.
  2. Season the shrimp with salt, pepper, and paprika. Cook them in a large pan with butter for 1-2 minutes per side until they turn pink. Remove the shrimp and set them aside.
  3. In the same pan, melt the rest of the butter. Add the garlic and red pepper flakes and cook for 30-60 seconds until they are fragrant. Pour in the chicken broth or lemon juice and let it simmer for a minute.
  4. Add the dry zucchini noodles to the pan and toss them in the sauce for just 2-3 minutes until they are tender. Add the cooked shrimp, parsley, and lemon juice back to the pan and toss everything together.
  5. Taste to adjust seasonings and serve immediately.
