Ingredients
- 1 cup long-grain white rice (Basmati or Jasmine work great)
- 1 ¾ cups water or chicken/vegetable broth
- 2 tablespoons fresh lime juice (from about 1-2 limes)
- 1 teaspoon lime zest (optional, for extra zing)
- 2 tablespoons fresh cilantro, finely chopped
- 1 tablespoon butter or olive oil
- 1 small garlic clove, minced (optional)
- Salt to taste
Instructions
- Rinse the rice in a strainer under cold water until the water is clear.
- Combine the rinsed rice, water or broth, butter/oil, and salt in a pot. Bring to a boil, then cover and simmer on low for 15-18 minutes until the water is absorbed. (You can also use a rice cooker.)
- Turn off the heat and let the rice sit, covered, for 10 minutes. Fluff it gently with a fork.
- While the rice is still hot, drizzle lime juice over it and add lime zest (if you're using it) and chopped cilantro. Gently toss it all together and serve.
